Brian's World Famous Banana Bread

Before starting this recipe, preheat the oven!

Brian's World Famous Banana Bread
Ingredients:
  • 2  cups (10 ounces) unbleached all-purpose flour
  • 3/4  cup (5 1/4 ounces) sugar
  • 3/4  teaspoon baking soda
  • 1/2  teaspoon salt
  • 1 1/4  cups toasted walnuts, chopped coarse (about 1 cup) 
  • 3  VERY ripe, soft, darkly speckled large bananas, mashed well (about 1 1/2 cups)
  • 1/4  cup plain yogurt
  • 2  large eggs, beaten lightly
  • 6  tablespoons butter, melted and COOLED
  • 1  teaspoon vanilla extract
 
 
Instructions:
  • Adjust the oven rack to the lower-middle position and heat the oven to 350 degrees.
  • Grease and flour a 9 by 5 inch load pan; set aside.
  • Whisk the flour, sugar, baking soda, salt, and walnuts together in a large bowl; set aside.
  • Mix the mashed bananas, yogurt, beaten eggs, butter, and vanilla with a wooden spoon in a medium
    bowl. LIGHTLY fold the banana mixture into the dry ingredients with a rubber spatula until
    JUST COMBINED and batter looks thick and chunky (don’t over mix!!!).
  • Scrape the batter into the loaf pan and smooth the surface with a rubber spatula.
    Bake until the loaf is golden brown and a toothpick inserted in the center comes out clean, about
    50 - 55 minutes.
  • Cool in the pan for 5 minutes, then transfer to a WIRE RACK to cool.
 
Tips:
  • Unless you normally buy plain yogurt, but a cup of "Fruit on the Bottom" yogurt. Scoop out what you need
    of the plain yogurt and then you are left with extra fruity yogurt on the bottom!

  • Sprinkle a little bit of cinnamon on top of the batter before placing the pan in the oven.

  • Serve this bread warm!  After you have taken the bread out of the pan, before serving, put the bread back
    in the oven (350 degrees) directly on the wire rack to reheat for about 5 minutes.  This will allow the
    bread to get a light crust around the outside and stay nice and moist on the inside!  Oh yeah!
